My kids love grilled cheese sandwiches and my soon to be college undergrad son loves it so much that he loves to make it with a variety of bread options and fillings in the microwave. From naan grilled cheese to bagel grilled cheese. He has tried most of it.
His favorite grilled cheese filling seems to be bacon while my daughter likes ham. My point is the microwave makes great great grilled cheeses and it’s safe for the kids since they do not need to turn on the stove to make it in the stove top.

- Bread: Use any bread that suites your dietary lifestyle. Use gluten free bread if you are gluten free, use vegan bread if living a plant based lifestyle. You can also use a low carb or keto bread too you should try carbonaut or Sola low carb breads.
- Butter: Use Vegan butter or margarine instead of butter if dairy free or plant based. You can also use mayonnaise instead of butter if you prefer.
- Cheese: swap out the cheddar cheese for American cheese. You can use any regular or plant based cheese you like.
How to make grilled cheese in the microwave

Toast the bread: If you want the real crispy effect of the exterior of a grilled cheese sandwich you need to toast the bread first. You can do this with a toaster or an air fryer. Butter the bread on one side and toast.
Next you place the cheese on one side of the bread (this is where you add any other cooked filling you might want to add like cooked bacon or ham) Cover the bread with the other slice. Pop into the microwave in a microwave safe plate for 20 to 30 seconds.

Storage instructions
Grilled cheese can be made ahead and leftovers keep well in the refrigerator for 2 to 3 days. To store, let it cool completely then transfer into a paper Bag and refrigerate. You can also wrap in plastic wrap before storing in the paper bag.
How to reheat grilled cheese
Grilled cheeses can be reheated in the microwave, air fryer or oven. Put it in the microwave and reheat at 10 secs intervals till it’s warmed through.
To reheat in the air fryer, place in the air fryer basket or rack, set temperature to 350°F / 180°C and reheat for 2 to 3 mins or until cheese is melty again.

- If toasting the bread in an air fryer, it’s best to butter the bread first. If using a toaster, I would recommend buttering the bread after toasting.

- If kids are making this encourage the use safety gloves when getting the plate out of the microwave.

This will generally depend on the kind of cheese used in your sandwich. cheeses shouldn’t stay out on the counter for more than 4 hours to prevent any bacterial contamination. However cheddar cheese can sit out for up to 6 hours that’s probably why it’s one of the most common cheese used for grilled cheese sandwiches especially for packed lunch.

Yes you can freeze grilled cheese. Place cooled grilled cheeses on a parchment paper lined baking sheet and freeze. When it’s frozen, wrap individually in wax paper abd freeze in ziplock bags for up to a month.
